What is sugar?
Carbohydrates are available in two basic forms, simple and complex, which are further divided into monosaccharides, disaccharides, and polysaccharides. The difference between the two is how quickly they are digested and absorbed, which is determined by their chemical structure. Complex carbohydrates are formed from three or more sugar molecules, whereas simple carbohydrates are composed of either one (monosaccharides) or two (disaccharides) sugar molecule. The most commonly available sugar moiety is glucose, fructose (fruit sugar), sucrose (table sugar), and lactose (dairy sugar). What are the ratios of these sugar molecules in the widely found sweet food? We need to know the different types of sugar available in natural sources.
